Vinicola del Guadiana is committed to making high
quality wine, which can only be obtained from using
grapes of good quality. This is the reason why we
continously monitor and follow up the maturity of
the grapes throughout its vegetative life cycle.
Special attention is given from the time of the
ripening to the time chosen as the optimal for harvest.
In order to establish
the optimal time of harvest and life thereafter
inside the vineyard, the most advanced techniques
currently available are used.
Particular importance is given to the precise
analysis of the must/grape juice and wine, by
using the advanced FTIR system (Fourier Transform
InfraRed), which offers an objective analysis
of the quality and maturity stage of the grape.
This makes it possible for us to estimate when
the harvest should start. A Red Neuronal Artificial
(ANN) as a means of which it is possible to identify
infected grapes is also used.
The best grapes are thereby selected for the best
wines.
The incorporation of
such analytical systems into the vineyard has drastically
improved the efficiency of our laboratory. The obtained
result is transferred to a database and linked to
the information about the carbolic acid levels,
gives us the possibility to improve future harvests.
This analytical system won the gold medal in the
VINITECH 2000 competition in Bordeaux, as the most
innovative enological solution of the year.

Finalising the harvest, the control and monitoring
of the obtained wines is carried out on a periodical
basis, always keeping in mind our aim to maintain
the highest quality in our wines, which is strictly
applied throughout the whole process until the wine
is transported away from the vineyard.
